Aitor Zabala, born and raised in Barcelona, has carved out a remarkable career in the culinary world, marked by his innovative and playful approach to cuisine. His journey into cooking began unexpectedly during his mandatory military service in Spain, where he was assigned kitchen duty. It was there that he discovered his passion for the culinary arts, which led him to enroll in culinary school with the support of his mother and grandmother, reflecting the strong matriarchal influence in Basque culture.

Zabala's career has been distinguished by his work with some of the most renowned figures in gastronomy, including Ferran Adrià and José Andrés. After honing his skills in Spain and the U.S., he opened Somni, an intimate 12-seat restaurant in the Bazaar at the SLS Hotel in Los Angeles. Somni, which translates to "dream" in Catalan, was celebrated for its technique-driven gastronomy and inventive dishes, earning Zabala two Michelin stars and solidifying his reputation in the culinary world. Despite its closure in 2020, Building on Somni's success, Zabala's next venture—a stand-alone restaurant—will serve as a reinvention of Somni, featuring his distinctive menu inspired by Spanish roots and global influences. His resilience and dedication continue to drive his quest for culinary excellence, promising to bring exciting new experiences to his diners.

‘’ Chef Aitor embraces new technology. From the very beginning, he was a big fan of virtual wine list on an iPad format. After doing some research, he settled on Alfred because although there are old school companies on the market, Alfred tends to do things better and with a lot more innovation behind it’’, explains Daniel Gorlas, General Manager at Somni.
